**Methi Rice Recipe (Fenugreek Leaves Rice)**

**Ingredients:**  

- 1 cup basmati rice (or any long-grain rice)  

- 2 cups fresh methi (fenugreek) leaves, finely chopped  

- 1 medium onion, thinly sliced  

- 2 green chilies, slit  

- 1 tsp ginger-garlic paste  

- 1/2 tsp turmeric powder  

- 1 tsp cumin seeds (jeera)  

- 1 tsp red chili powder (adjust to taste)  

- 1/2 tsp garam masala  

- 1 tbsp ghee or oil  

- 2 cups water  

- Salt to taste  

- Fresh coriander leaves for garnish  







 **Instructions:**  


 **Step 1: Prepare Rice**  

1. Rinse the basmati rice under cold water until the water runs clear. Soak for 15-20 minutes, then drain.  


 **Step 2: Sauté Aromatics**  

1. Heat **ghee or oil** in a pan or pressure cooker.  

2. Add **cumin seeds** and let them splutter.  

3. Add **sliced onions** and sauté until golden brown.  

4. Stir in **ginger-garlic paste** and **green chilies**, sauté for 1 minute.  


**Step 3: Cook Methi Leaves**  

1. Add **chopped methi leaves** and cook for 2-3 minutes until they wilt.  

2. Add **turmeric powder, red chili powder, garam masala**, and **salt**. Mix well.  


 **Step 4: Cook Rice**  

1. Add the **drained rice** and gently stir to coat with spices.  

2. Pour **2 cups of water**, mix well, and bring to a boil.  

3. **For Stovetop:** Cover and cook on low heat for 15-20 minutes until rice is done.  

   **For Pressure Cooker:** Cook for 1 whistle, then let pressure release naturally.  


 **Step 5: Fluff & Serve**  

1. Once cooked, fluff the rice gently with a fork.  

2. Garnish with **fresh coriander leaves**.  


 **Serving Suggestions:**  

- Serve hot with **raita, pickle, or papad**.  

- Pairs well with **dal tadka or kadhi**.  


 **Tips for Perfect Methi Rice:**  

✔ Use **fresh methi leaves** for the best flavor (avoid bitter ones).  

✔ Adjust **spice levels** as per preference.  

✔ For extra richness, add **cashews or raisins** while sautéing.
